(Raise Your) Blood Sugar – Part 11 – The Unicorn Made Me Do It

Dear Reader,

for the collection’s finale I am going to make magic happen… with science!

To set the stage, prepare the base cookie dough.
IMG_3126 Roll the dough out between two sheets of baking paper (about 0.5 cm thick) and cut it into squares (4×4 cm).

IMG_3131 Bake the cookies at 190 °C until their edges start to brown (about 10 minutes).

IMG_3178Spread some blackberry jam on a cookie and sandwich another cookie on top.

IMG_3160…er, no. Now, to make magic food colouring, chop up a few red cabbage leaves and boil them with 1.5 – 2 cups of water until the colour is extracted from the leaves. Strain out the cabbage and return the liquid to the pot. Heat on a very low temperature (the liquid should be steaming, but not boiling) until most of the water has evaporated.

IMG_3240For the icing, mix 100 g of powdered sugar, two tablespoons of golden syrup and a few spoons of water. Separate three portions of the icing (about two tablespoons each).

IMG_3243To the first portion of icing add a tablespoon of cherry juice. Mix in about a tablespoon of powdered sugar to restore the consistency. This will make a light pink icing.
To the second portion, add a few drops of the cabbage colouring as well as a few drops of lemon juice. This will make a purple icing.
To the third portion, add a few drops of the cabbage colouring and a little sprinkle of baking soda, to shift the colour to blue. Be careful not to add too much baking soda as this might turn the colour greenish (also, baking soda is not a pleasant icing flavour).

The magic science behind the colour changing icing: the colour of the cabbage dye depends on the molecular structure of the main component, anthocyanin, which depends on the acidity of the mixture the molecule is in. In neutral conditions, the dye is purple, with increasing basicness (that’s the job of the baking soda in the mixture) it turns blue, then green.
Bonus fun fact: blueberries contain the same colourful compound and baking powder is basic (similar to baking soda) – that is why zombie-coloured muffins may happen some times.

IMG_3249Add a dab of each icing onto the cookies. Use a toothpick to even out the edges and to draw swirls and patterns into the intersecting colours. Let the iced cookies relax for a while until the top of the icing dries. Decorate with halved blackberries, and here we are!

(Raise Your) Blood Sugar – Part 10 – Strong

chocolate cannot fix things, but sometimes it may improve the day a little.

Prepare the base dough.
IMG_3119Take a portion of the dough and knead a tablespoon of cocoa powder into it. Let the dough chill in the refrigerator for an hour.

IMG_3150Roll the dough out between two sheets of baking paper (about 0.5 cm thick) and cut it into squares (4×4 cm).

IMG_3164 Bake the cookies at 190 °C for about 10 minutes.

IMG_3220Heat 50 ml of heavy cream over a hot water bath (be careful when handling the bowl – hot steam may escape from the pot!). Dissolve a packet of instant espresso in the cream.
IMG_3222Add 50 g of dark chocolate to the bowl, allow it to melt and stir it into the coffee cream.
IMG_3224Place the finished cream into the refrigerator to set.

IMG_3234Break half of the cookies. Spread some of the coffee cream on a cookie and reassemble the cookie pieces on top.

IMG_3294Melt 50 g of dark chocolate over a hot water bath. Coat the cookies with chocolate and let them chill in the refrigerator until the chocolate solidifies. Using edible silver shimmer, adorn the cookies with love… and here we are!

Shh! Don’t tell anyone, but I’m starting a conspiracy to increase the amount of green tea flavoured sweets in Europe.

Conspiracy

This conspiracy begins with rumors about base cookie dough. Roll the dough out between two sheets of baking paper (about 0.5 cm thick) and cut it into squares (4×4 cm).IMG_3129Bake the cookies at 190 °C until their edges start to brown.

IMG_3209Melt about 100 g of white chocolate over a hot water bath and stir in 50 ml of whipping cream (be careful when handling the bowl, hot steam may escape from the pot!).

IMG_3214Please note, that the amounts of chocolate and cream were for the entire cookie collection, if you are only making this cookie, use about 1/3 of the ingredients.

IMG_3216 Take 1/3 of the chocolate mixture and stir in a teaspoon of matcha (green tea) powder.

IMG_3229 Spread some filling onto a cookie and sandwich another cookie on top. Put the sandwiches into the refrigerator to set the filling.

IMG_3274Melt about 50 g of white chocolate over a hot water bath. Coat the cookies in chocolate and place them back into the refrigerator to solidify the chocolate.

IMG_3297Prepare a paper stencil, paint mysterious symbols onto the cookies using matcha powder, and here we are!

with today’s cookie we celebrate the makeup (mis)adventures of Garrett Watts.

To begin this adventure prepare the base cookie dough.IMG_3115Take one portion of the dough and knead about a teaspoon of gingerbread spice mixture into it. Place the dough into the refrigerator to chill for one hour.

IMG_3144Roll out the dough between two sheets of baking paper (about 0.5 cm thick) and cut it into squares (4×4 cm).

IMG_3148Bake the cookies at 190 °C until they start to brown.

IMG_3186For the buttercream filling, mix two tablespoons of powdered sugar with two tablespoons of butter. Mix in a splash of milk (about a teaspoon).

IMG_3187Separate about half of the buttercream and mix in a few drops of vanilla flavouring.

IMG_3192Spread some buttercream filling on a cookie and sandwich another cookie on top.

IMG_3276Melt about 50 g of white chocolate over a hot water bath (be careful when handling the bowl; hot steam may escape from the pot!). Coat each cookie with chocolate and place them into the refrigerator to set.

IMG_3107Take one portion of the dough and knead two tablespoons of sprinkles into it. Let the dough chill in the refrigerator for about an hour.
IMG_3128Roll the dough out between two sheets of baking paper (about 0.5 cm thick) and cut it into squares (4×4 cm).
IMG_3136Bake at 190 °C until the cookies begin to lightly brown around the edges (about 10 minutes).
IMG_3186For the buttercream, mix two tablespoons of powdered sugar with two tablespoons of butter. Mix in a splash of milk (about a teaspoon).
IMG_3187Separate about half of the cream and add a few drops of vanilla flavoring.
IMG_3198Spread some of the buttercream onto a cookie and sandwich another cookie on top.
IMG_3207For the white chocolate cream frosting, melt 100 g white chocolate over a hot water batch and mix in 50 ml of whipping cream (be careful when handling the bowl as hot steam may be escaping from the pot).

IMG_3120Prepare the base cookie dough. Roll a portion of the dough out (about 0.5 cm thick) between two sheets of baking paper and cut it into 4×4 cm squares.

IMG_3134Bake the cookies at 190 °C until the edges start to brown (about 10 minutes).

IMG_3207Over a hot water bath, melt 100 g of white chocolate and mix it with 50 ml whipping cream.

IMG_3214Place the finished filling into the refrigerator to set.

IMG_3278Spread some of the cooled chocolate filling onto a cookie, sandwich another cookie on top and spread some chocolate cream on it as well.

Our Signature look – cherry pink with a hint of silver.

IMG_3126Prepare the base cookie dough. Roll the dough out between two sheets of baking paper (about 0.5 cm thick) and cut it into squares (4×4 cm).
IMG_3132Bake the cookies at 190 °C until they start to brown.
IMG_3173Spread some cherry jam on a cookie and place the second cookie on top.
IMG_3240For the icing, mix 100 g of powdered sugar, two tablespoons of golden syrup and a few spoons of water.
IMG_3269Separate a few spoons of the icing, add a spoon of cherry syrup (you can make your own by heating some cherry juice over very low heat until most of the water evaporates and the juice thickens) and 1-2 teaspoons of powdered sugar to restore the consistency. Grate up a piece of red beet. Squeeze a few drops of beet juice into the icing to give it an intense pink colour (using cheery juice alone will result in a lighter pink colour). Do not worry, you will not end up with beet flavoured icing.
IMG_3272Set the glazed cookies aside until the icing dries down and is not sticky to touch anymore. In that time prepare a star shaped paper stencil.
IMG_3291Using the stencil (or not, if you have a steady hand) and edible shimmer adorn each cookie with a silver star. And here we are…

To make your own collector’s item, you will first need a solid base.
IMG_3121Take one portion of the base dough and roll it out (about 0,5 cm thick) between two sheets of baking paper and cut it into squares (about 4×4 cm).
IMG_3134Bake at 190 °C until the edges start to brown (about 10 minutes).
IMG_3186For the buttercream filling, mix two tablespoons of powdered sugar with two tablespoons of butter. Mix in a splash of milk (about a teaspoon).

Separate about half of the cream and add a few drops of lemon juice and a sprinkle of lemon zest.

Sandwich the buttercream between two cookies.

For the icing, mix 100 g of powdered sugar, two tablespoons of golden syrup and a few spoons of water. Separate two tablespoons of this mixture and combine with a little of lemon juice (about 1/2 of a teaspoon) and a pinch of lemon zest.

To make the „mirror shards“, place a pan on medium heat, add a few spoons of sugar. Heat the sugar until it melts (keep stirring).

Pour the melted sugar onto a sheet of baking paper and spread it out. When the sugar solidifies, break it up into smaller pieces (be careful of sharp corners!).

Top each cookie with the icing.

Brush one side of the sugar shards with edible glitter and arrange them on top of the icing…

(Raise Your) Blood Sugar – Part 2 – Hot Tea

we went into the series expecting some hot tea to be spilled.

This cookie does what it says: hot(ish) chili chocolate cream sandwiched between two Earl-Grey tea-infused cookies with icing on top.

Every series has a beginning. This collection begins with a base cookie dough.
Cream 1 1/4 cups of butter with 1 cup of sugar and a packet of vanilla sugar. Mix in three eggs one by one.

Sift in 5 cups of flour and 1 1/4 cup of cornstarch, add 3/4 of a teaspoon of salt. Mix and knead everything together.
Note: this amount of dough made me 80 cookies (40 sandwiches) with some dough left over.
Divide the finished dough into ten portions. Reserve one of them.

Grind 1-2 teaspoons of Earl Grey tea and sift out any bigger bits left.

Knead the ground tea into the dough. Wrap the dough in clingfilm of place it in a closed container and chill it in the refrigerator for about one hour.

Roll the dough out between two sheets of baking paper (prevents the dough from sticking to the rolling pin). Cut it into squares (4×4 cm).

Bake at 190 °C until the edges start to brown (about 10 minutes).
While the cookies cool, let’s make the filling.

Heat a pot of water on the stove, this will be the hot water bath, place a bowl on top of the pot. Add 50 ml of whipping cream and 50 g of chili chocolate (this made enough filling for the cookies with leftovers, half the amount should suffice as well). Heat the bowl on the water bath until the chocolate melts (be careful when handling the bowl, hot steam may be escaping from the pot). Take the bowl off the pot and stir the chocolate and the cream together until they form a uniform mass. Put the finished filling into the fridge to cool down and set a little.

For the icing, mix 100 g of powdered sugar, two tablespoons of golden syrup and a few spoons of water. Separate two tablespoons of this mixture and combine with a little of lemon juice (about 1/2 of a teaspoon).

Spread some filling on the cookie, sandwich another cookie on top, drizzle on some icing, decorate with a sprinkle of tea leaves…

Hi, how are you?

This time we are branching out a little. Into Screen and Pin territory, shall we say?

Over the past days I have been watching Shane Dawson’s latest series with Jeffree Star. I laughed, I cried, I cried while laughing, because some part of my brain got confused about what we’re actually feeling, I thought, I learned. I enjoyed it immensely.

Somewhere between one frame and another inspiration struck like a lightning bolt. One epic kitchen adventure later, I present the (Raise Your) Blood Sugar collection:
